Home canners and food preservers are familiar with fruit pectin for it's ability to help jams and jellies "set", that is, to thicken and form a "gel". But pectin also has health benefits for humans, most notably,  its ability to reduce low-density lipoprotein (LDL) levels, thereby lowering cholesterol levels. But pectin is also documented to:

  •  slow the passage of food through the intestine
  • activate cell death pathways in cancer cells (which some researches believe may help in preventing certain types of cancer.)

People use pectin for high cholesterol, high triglycerides, and to prevent colon cancer and prostate cancer. It is also used for diabetes and gastroesophageal reflux disease (GERD). Some people use pectin to prevent poisoning caused by lead, strontium, and other heavy metals. Pectin is also used to reduce the skin flushing associated with taking niacin.
